At Uliveto di Maya, located in the Sabine hills north of Rome, olives are collected by hand right as they are ripening. This usually occurs during the first week of November at our grove that is 550 meters above sea level and facing due south. They are hand picked processed the same day of collection using mechanical procedures (cold) to preserve all the organoleptic qualities of this oil, yielding a vibrant golden oil with a distinct peppery piquancy. After processing, Oro di Mompeo is stored in stainless steel containers, and are naturally decanted to assure that the oil bottled is at its best.
